Perfect pesto pasta for Vegan Night

Wednesday’s Vegan Night featured a great taste treat in Sun-Dried Tomato Pesto with Tofu, Vegetables and Penne Pasta. This dish combined the delightful fresh flavors of sun-dried tomatoes, basil, grape tomatoes, green and yellow squash and asparagus to make a very pleasing spring meal.
