For our first dish in the Julia Project, we are starting with the first dish Julia Powell herself cooked from Mastering the Art of French Cooking, Volume 1: Potage Parmentier, or French leek and potato soup. Julia Child advised that this dish “smells good, tastes good, and is simplicity itself to make,” but Julia Powell’s opinion was “‘simple’ is not exactly the same as ‘easy.'” Of course, Ms. Powell was preparing her dishes without the benefits of a professional restaurant kitchen or 20-plus years of experience as a professional chef. But…she was also preparing it for a small circle of friends, rather than a restaurant full of hungry patrons.
